Here’s a classic Mexican recipe for Chicken Enchiladas:

Chicken Enchiladas

Ingredients:

2 cups cooked and shredded chicken

1 can (14 oz) red enchilada sauce

1 can (4 oz) diced green chilies (optional)

1 cup diced onion

1 cup diced bell pepper (any color you prefer)

2 cloves garlic, minced

1 teaspoon cumin powder

1 teaspoon chili powder (adjust to taste)

Salt and pepper to taste

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

8 small corn tortillas

Cooking oil

Chopped fresh cilantro (for garnish)

Sour cream (optional, for serving)

Instructions:

 

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Filling: In a large skillet, heat a bit of oil over medium heat. Add onions and bell peppers and cook until they start to soften, about 5 minutes.

 

Add garlic and cook for another minute, until fragrant. Add shredded chicken, cumin, chili powder, salt, and pepper. Stir well to combine.

 

If using green chilies, add them now.

 

Warm Tortillas:

In a separate skillet or on a griddle, warm the tortillas for about 20 seconds on each side. This makes them pliable and prevents them from cracking when rolled.

 

Assemble Enchiladas: Pour a small amount of enchilada sauce into the bottom of a baking dish and spread it evenly.

 

Place a generous spoonful of the chicken mixture onto a tortilla, roll it up, and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

 

Add Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas, making sure they are all evenly coated.

Sprinkle the shredded cheese over the top.

 

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

 

Serve: Remove from the oven and let it cool slightly before serving. Garnish with chopped cilantro.

Optional Toppings: Serve with additional toppings like chopped fresh tomatoes, avocado slices, and a dollop of sour cream.
